I tried to install plymouth

I would suggest not using plymouth, as that has been causing issues for people (and is why the team removed it).

There has been recent reports after updating that you really need to be sure the BIOS setting is set for AHCI mode. Might be your issue too?

Not able to boot after update

Hmm, well something is preventing the NVMe drive from being recognized at boot time, which is an issue since that is where your EFI partition is. Check in your BIOS settings to confirm your device's SATA controller is set to AHCI mode (not RAID, or any other configuration).
