Have you considered the use of luks as the root of your issue:

I guess… the discard operation is not supported.

From fstrim.service:

/usr/bin/fstrim --listed-in /etc/fstab:/proc/self/mountinfo --verbose --quiet-unsupported

From man fstrim:

       --quiet-unsupported
           Suppress error messages if trim operation (ioctl) is unsupported. This option is meant to be used in systemd service file or in cron(8) scripts to hide warnings that are result
           of known problems, such as NTFS driver reporting Bad file descriptor when device is mounted read-only, or lack of file system support for ioctl FITRIM call. This option also
           cleans exit status when unsupported filesystem specified on fstrim command line.

The timer is correctly enabled, but see here: Discard/TRIM_support_for_solid_state_drives_(SSD)
