if i mount the Windows partitions os prober detects the OS and adds it to GRUB
but then when i try to boot Windows from there it throws “invalid signature”
Because your windows requires Secure Boot, you have to deactivate this in windows.
lol youre quicker would ask for ssecure boot disabled in bios or windows
secure boot is disabled, and has been disabled ever since i got this computer
both operating systems are also installed in MBR and the BIOS is not in UEFI mode

If I read that correctly, you installed Garuda first and THEN Windows? If so, then that was wrong, because windows simply overwrites everything, including the boot entries in the BIOS. You have to install windows first and THEN Linux.
