By default Gnome does not have a dock and it cannot be enabled without an extension. The needed extension is in the Chaotic AUR, so adding it is very simple.
First bring your system fully up to date:
garuda-update
Install the extension:
sudo pacman -S gnome-shell-extension-dash-to-dock
Then search for extensions in the overview.
In extensions, enable "Dash to Dock" by clicking the button on. You can adjust the settings to enable auto-hide.
The setting is called "Intelligent autohide". It hides the dock if windows are open nearby, but if you mouse over the dock it will reappear.
