It really looks like you have a setting wrong in your bios, i have come across this before.
Your graphics card is not being seen at boot.
Check you have the most upto date bios?
Reset bios to defaults,
Check all the above are still disabled after the reset.
I'm sure the settings are as they should be already, and I double checked again before that last attempt there.
secure boot - disabled
fastboot - disabled
UEFI boot - enabled
BIOS is latest from April, 2021.
I will reset again and try again. But I sure the same thing is going to happen.
Intel NUCs tend to have absolutely terrible Linux support so it shouldn’t be too surprising.
Also feel free to complain to the retailer that they’d sell it as “Linux compatible” etc.
