Lesson learnt I hope 
Always have at least one backup in case something corrupts.
Software like pikabackup can make regular backups for you and even encrypt them

Most of my files are kept externally on another hard drive, I’m just more worried about all the Dropbox clean up not syncing since my DSL connection is so slow. Now, that is out of the way

Could you just check if it’s still hanging when you reboot? Just in case?
Edit: You should probably also run some updates since you rolled back a bunch earlier. Since they apparently weren’t the root cause of the issue you should be golden

There is no problem, just read the last line.
it’s unusual for luks to take a long time to unlock all of a sudden. I do think that’s a problem, maybe several failed reading attempts or something like that
