Those are not Chaotic-AUR packages. In fact that person does not even have the Chaotic-AUR repo added at the moment. Their issue is something else.

tenacity-git is in Chaotic; could also add tenacity ?
Are you very certain you want it? The releases are extremely infrequent and tend to miss out on many hotfixes and quality of life improvements for months at a time. For example, it's 8 days away from being 3 months since the last release!

The libplacebo-git compile problem has been fixed.
I tried installing libplacebo-git from AUR and then mpv-full from AUR, I still get
mpv: error while loading shared libraries: libplacebo.so.315: cannot open shared object file: No such file or directory
The mpv-full maintainer said this
@Hanuman Telling that mpv-full requires libplacebo.so.315 does not make sense. mpv 0.36.0 requires libplacebo >= 6.278.0, regardless of the library soname, being it 315 or the current one in libplacebo git masster (318). As I said, the package is currently building fine. What you could be facing is a build issue with libplacebo-git, which currently fails to build due to missing git submodules in the PKGBUILD. In the libplacebo-git AUR web page, Iāve posted a fix that can be manually applied to the PKGBUILD before the packager update, for those wanting to build it now. You can apply my suggested fix to libplacebo-git PKGBUILD, or also manually specify a slightly older upstream git commit libplacebo-git PKGBUILD. My bet is that the issue youāre facing is due the AUR helper, which tries to automatically build everything. AUR helpers are not supported, please use makepkg. Iāve just checked, and the package is building fine with the latest versions of ffmpeg-git and libplacebo-git, as long as you apply the fix to libplacebo-git PKGBUILD.

Why do we host binaries?
The -git version cannot be built automatically, but you can build it yourself.

I thought that reply from the mpv-full maintainer described the issue pretty lucidly, and suggested a straightforward solution as well. What specifically are you asking for additional clarification on?
Because they have a less lengthy build routine, and since the Chaotic-AUR is building AUR packages without modifying the PKGBUILD anyway there is no benefit to not using the binary version (the resulting package will be the same either way). It seems logical to take the path of least resistance.
Plus, many if not most of those packages do not actually have a non-bin version in the AUR.

AUR bin packages require no compilation.
He said the issue is with libplacebo-git. That package compile has been fixed; issue remains.
mpv-full-git works though, Iāll use that for now.
- Pointed out already, no non-bin
- Specifically requested because there is an advantage over non-bin
- Broken non-bin
- Reduce compilation time for deps, eg. Electron is fucking huge.

dotnet 7 got released last November
They still need to be built, and rebuilt for updates, etc. Additionally, having them in the Chaotic repo allows the packages to be managed by Pacman, which is useful for a number of reasons.
The question or request here is unclear. The 7.0 packages (dotnet-sdk, dotnet-runtime, dotnet-targeting-pack, etc) are in the [extra] repo, if you are trying to find them.
Or are you asking why people still need to use 6.0? 6.0 is an LTS release I believe, maybe thatās why.

I think all even numbers are LTS releases, so the upcoming 8 will be as well.

You need specific .NET frameworks depending on what the project was compiled for.
Also, even if .NET 7 was released, you may want your compile target to be .NET 6 or 5. Windows allows installing multiple versions; on Linux, you do it this way.
Need older .NET bins like that. Also bins for future preview version.
Another unnamed reason is terrible servers. Sometimes there are downloads of only ~100MB that can take up to hours!
