Why is it (apparently) so hard to monitor the GPU on Linux?

No taskmanagers etc i know of can show me my GPU Usage / Temp.
The only thing i found (and i use) is the watch -n sensors command to at least show me my GPU temp

Please, depending on your DE/WM, there are many extensions, plasmoids, etc. available for you to install and use.

Searching is the key to a lot of your questions. Exploring your DE/WM is also extremely helpful.

Posting the terminal output of inxi -Faz, is required for further help.
