UPDATES (tl;dr: DONE! Gonna have to spend more time with it to really decide what I think of it all, though):

Motherboard replacement on main laptop completed successfully - Fedora 38 (Gnome) installed successfully and nearly completely configured to my liking!

Garuda (Gnome) installed successfully on the backup laptop (from where this reply is being written).

Sweet and Beautyline installed a selected.
Initial impressions:

Beautyline looks phenomenal as always!

Sweet theme colors (gradient purple) present and admired.

A very similar title bar on most apps to the Dr460nized install. Aka a very “un-Gnome-like” title bar. Also gets rid of rounded corners on those apps / shell elements, which is a shame, as I really like the rounded corners.

A very inconsistent application of the theme, as “files” and a few other programs / shell elements ignore the theme completely other than for the color scheme and the icons. Retains “gnome title bars” and rounded corners.

No translucency / blur. I realize that’s a Gnome thing rather than a Sweet Theme thing. On Fedora, I found an extension that blurred everything. But with no way to make it less intense on active windows, it just did more harm than good.

The Gnome extension to add desktop icons works in Fedora, but not here. This is using an ever so slightly newer version of Gnome (44.5 vs 44.4, I believe), so it could be a shell version issue. But either way, no desktop icons for St. John.
Verdict:
TBD. Lots of things I really love about it, a few things I hate about it, and other things I’m just baffled by. So, I’m gonna spend some quality time with it on the backup laptop, and gradually decide whether it’s something I’d want to put on the main machine or nah. It’s likely that by the time I’ve made up my mind, this thread will have expired, so I may or may not ever be able to provide an update to the group. But ultimately, I think I’ve gotten to where I need to be to make that eventual determination.

UPDATE (including question):
In Gnome Tweaks, I’ve observed that it’s only the “Legacy Apps” that adopt the Dr460nized-like title bars and the square (non-rounded corners) windows. Non-legacy apps and the system shell will adopt Sweet-Dark colors, but will retain the rounded corners and the more “conventional Gnome” design motifs (including title bar).
I’ve decided that in Gnome, I’d actually rather not have the KDE-like titlebars etc, but when I revert Legacy Apps to the default (adwaita dark) theme, I lose everything I like about Sweet-Dark as well. It seems as if it’s an all-or-nothing “Faustian Bargain” sorta thing.
Keep in mind (with my apologies) that I’m a total Gnome noob. I know how to deal with stuff like this in KDE, but am lost over here on Gnome. Any ideas?

[PROBABLY] FINAL UPDATE: Installed Garuda Gnome on the big rig. It looks better than on the laptop, so I’m happy with the change! Now I’ll go figure out some other distro to install on the backup laptop.
